Make this simple, yummy dish for dinner tonight! See recipe below... INGREDIENTS: Brown rice (cooked in advance) Black beans (1 can) Red pepper (1/2 -3/4 large) Red onion (1/2 diced) Garlic Cloves (2-3 cloves) Shredded carrots (about 1 cup) Coconut oil (2-3 TBS) White pepper (to taste) Pink Himalayan sea salt (to taste) Garlic salt (to taste) OPTIONAL: Fresh Lime juice Organic Corn tortillas Cheese Spinach Precook your rice. I cooked mine in my rice cooker (4 cups of water to 2 cups of brown rice.) If you are cooking on the stove in a sauce pot, Bring the water to a boil. Add the rice and bring to a boil again, then turn the heat to low. Let cook on low for 15 minutes. Set aside. Put a couple of TBS of Coconut oil in the pan, cook your onions until translucent. add your red pepper,cook until slightly tender, add your tomatoes and beans and simmer until heated all the way through. Mix into rice, and serve or you can put this mixture on top of corn tortillas add lettuce, tomatoes, cheese olives etc, and then serve (See more pictures below). When your beans and veggies are cooked through, add to the rice and mix together completely. You may want to add the juice of 1/2 a lime to add a little "zest" to your dish! You may serve this as a main dish by itself, or as a side dish, or served on top of tortillas. If you choose to put this dish on top of your organic corn tortillas, sprinkle a little cheese on top and broil until the cheese is melted. Then add your toppings.
