Serves 4
Produce 2 bay leaves 2 carrots 2 stalks of celery 5 cups of corn 1 green onion 1 onion ½ cup parsley, fresh 1 red pepper 3 russet potatoes, medium-sized Refrigerated ½ cup almond or coconut milk, unsweetened Canned Goods 1 cup coconut cream 4 cups vegetable broth Baking & Spices 1 tsp. black pepper 1 tsp. salt ½ tsp Smoked Paprika and ½ tsp Cajun seasoning (Optional: the black pepper makes this spicy enough for my family.) Add all ingredients except coconut cream to a large stock pot. Cook on medium heat stirring occasionally until veggies are fairly soft. Take out some veggies and broth and blend in a high-powered blender (about 1 cup). Add back into the soup. Add coconut cream and spices. Warm thoroughly.
